8 Lasagna Noodles
4 tsp olive oil
1/2 cup Onion
8 oz sliced mushrooms
6 oz baby spinach
3 garlic cloves
1/2 cup mozerella
1/2 cup ricotta
1/4 fresh basil
1/2 tsp salt
1/4 tsp red pepper
Sauce:
1/8 tsp crushed red pepper
1 T red wine vinegar
1/4 tsp salt
1/4 tsp pepper
2 garlic cloves
14.5 oz diced tomatoes undrained
7 oz roasted red peppers undrained
1. prepare noodles, rinse with cold water.
2. Heat oil on med high heat. Saute onion, mushroom, spinach and garlic for 5 minutes. Remove from heat and add cheeses, basil, 1/2 tsp salt and 1/4 tsp red pepper.
3. Prepare sauce mixture in blender.
4. Spread about 1/4 cup cheese mixture over each noodle. Roll up jelly roll fashion. Place in dish seam side down. Pour sauce over noodles. Heat in oven. (I set it at 350)

Seared and Braised Pork Tacos
Meat is already seared and seasoned.
Braise: Place meat in dutch oven (covered roasting pot), cover 2/3 way up (meat) with water, cover and cook in oven at 300 F for 2-3 hours (most likely 2, meat should be easily shredded).
Shred and add whole can of diced tomatoes
Simmer uncovered on stovetop for 30 minutes
Charlie and I eat this in soft tacos with the regular taco fixings OR on its own as a stew, you decide. : )

Greek Chicken Pasta
Thaw and heat through
Recipe:
1 lbs. chicken breast cubed
1/2 lbs. uncooked pasta
2 T olive oil
2 cloves garlic
1/2 c. chopped red onion
3 T. fresh chopped Parsley
1/2 c. feta cheese
1 can marinated artichoke hearts
2 t. dried oregano
2 T. lemon juice
1 large chopped tomato
salt and pepper to taste
boil pasta and drain, cook chicken in skillet with olive oil, garlic and onion. When no longer pink, drain, then add pasta and remaining ingredients, cook for approximately 4 min until heated through.

Viennese Beef Stew
1 ½ lbs beef stew meat
2 med onions
4 T butter
1-2 tsp caraway seed
½ t marjoram
2 cloves garlic minced
1 can lt beer
1 c water
1 bullion cube
1-2 tsp salt
6 med potato quartered
3 T paprika
4 T Ketchup
Sour Cream (about half container)
Optional:Mushrooms or carrots
Brown beef, onions, garlic and butter. (I use much less and EVOO too) Add seasonings, beer, water, salt, ketchup and let cook for 40 min. Add Potatos and cook until done. Add veggies the last 5 minutes or so. Stir in sour cream at the end(I use fat free and eyeball it to get the correct creamy color)
FYI - I didn't think the stew froze very well, and the meat didn't get very tender, so this might be a better recipe to make once at a time...

Italian Meatloaf
Bake for 1hr. at 350
It may be a good idea to poke holes in the bottom and place a baking dish underneath to drain the fat.
Recipe
1 1/2 lbs. ground beef
2 c. mozerella cheese
2/3 c. Italian bread crumbs
1 teas. oregano
1 teas. italian seasoning
1 teas. basil
2 T. spagetti sauce
3 beaten eggs
1 can diced tomatoes drained
mix together and press into bread pan

Honey mustard Pork Tenderloin and Carrots
Bake thawed(I would not recommend baking the loin frozen) Tenderloin in oven for 40-50 minutes at 350 uncovered. Inner Temp of Loin should reach 145. It can be pink in the middle as long as it has reached the 145 temp. I did mine in a shallow glass dish, and included the juices from baggie. Let stand for five minutes, slice and serve:)
Cook thawed carrots, butter, and brown sugar at med-high in a sauce pan. This will take 15 minutes or so. They will need to be turned so the brown sugar does not burn. We sprinkle some sea salt on them as they are cooking. Not much, just some:)
Jennie, the only dairy is the butter in the carrot bag. There is not any dairy in the marinade:)
